Since we're on the go a lot more lately, I'm trying to use the crockpot more for easy dinners. So, I tossed in a whole carton of veggie broth, about 15oz of canned, diced tomatoes, some salt, black pepper, a good amount of smoked paprika, cumin, and a mixture of presoaked (overnight) beans (cannellini, black, red kidney, and pinto), and about half a red onion into the crockpot. Cooked it on high for, like, the whole day...because I'm a genius and didn't think to start it the night before on low, instead. That's it - and it was SO freaking good. Like, way better than I expected plain 'ol beans to taste :) I did blend up about a cup or so in the VitaMix, then poured it back into the crockpot, just to make it thicker. Served it with some brown rice & even Ezra ate all of his - for dinner and lunch the next day. That's got to be a record.
We went down to Crown Point for a little running-and-playing time a couple days ago. Ez had a really good time and especially enjoyed throwing wads of wet sand into the water. Of course, he wouldn't reach down to get the sand himself -- that was Jordan's job. He simply grunted impatiently for more the second he threw his last fistful into the water ;-)
